Date-Filled Cookies

Date-Filled Cookies
 
Filling:
1 lb pitted dates
½ c sugar
½ c water

Cook dates with sugar and water and smoosh until filling is the right consistency.

Cookies:
1 egg, beaten
 ¾ c shortening
1 ½ c sugar
1 tsp salt
1 tsp nutmeg
1 tsp vanilla
1 c sour milk (1 T vinegar plus milk to make 1 cup total liquid)
1 tsp baking soda
6 c flour

Beat egg, add shortening and sugar, and cream together.  Add salt, nutmeg, and vanilla.  Add soda to sour milk.  Alternate adding milk and flour to mixture in bowl until all combined. 
Roll dough, cut out circles approximately 8cm. in diameter.  Place filling on each one, fold over, pinch edge together.

Bake at 375 for 15 minutes.
