Refrigerator Cheese Cake

Mom's (Ruby's) Refrigerator Cheese Cake

Crust:
1 1/2 c. graham cracker crumbs
1/3 c. sugar
1 tsp. cinnamon
1/2 c. melted butter
   Mix together and press half the mixture into a 9" pan.
   Save the rest for topping.

Cake:
2 envelopes unflavored gelatin
1/4 c. cold water
2 slightly beaten egg yolks
1/2 c. milk
1 c. sugar
1 tsp. salt
1 T. grated lemon peel
1/3 c. lemon juice
2 c. sieved cottage cheese
2 tsp. vanilla
1 c. heavy cream, whipped
2 stiffly beaten egg whites

Soften the gelatin in the cold water.
In double boiler, combine yolks, milk, sugar and salt.
Cook over hot, not boiling, water, stirring constantly until
mixtures coats a metal spoon.  Remove from heat.  Stir the
gelatin into the hot mixture and stir until dissolved.  Add lemon peel.
Cool.   Beat well.  Mix cheese, lemon juice and vanilla.  Stir into gelatin
mixture.  Fold in whipped cream, then beaten egg whites.  Pour into
crumb lined pan.  Top with remaining crumbs.   Chill thoroughly.
