Fruit Preserves

Fruit Preserves


1 pound berries (fresh or frozen)
½ cup sugar
Squirt of lemon juice (once or twice around the pan)

In large saucepan over low/medium heat.  Mash berries with potato masher.  Stir in sugar and lemon.  Cook, stirring every 5 minutes or so, until volume is reduced to 1/3 – 1/2 original.
Let cool and put in jar.  Will keep 4-6 weeks in refrigerator or 6 months in freezer.

I’ve used fresh and frozen.  I’ve used strawberries, raspberries and that frozen berry mixture from the grocery store.  They’ve all been excellent!


Watch when it starts to boil.  The bubbles WILL make a mess all over your stove if your pan is too small.
