Stress-Free Thanksgiving

Stress-Free Thanksgiving

Prepare as much as possible earlier in the day and refrigerate until ready
                green beans
                sweet potatoes
                mash potatoes and keep warm in crock pot for a couple of hours m(note:  ski cap makes a great “hugger” for the small crock pot!)
                GRAVY:  1 can chicken broth, ½ cup flour whisked in saucepan.  keep in fridge until drippings are ready.  Add drippings (2-3 cups) and bring to a boil.  Simmer 5 minutes and season if necessary


TURKEY:  rub under skin and on skin with mixture (olive oil, salt, pepper, garlic powder)  (see James’s document “How to Grill a Turkey”)

Gravy (with hints from MasterChef):  Mix together ¼ cup butter and 1/3-1/2 cup flour over medium heat.  Continue to heat as mixture (roux) gets slightly browned and bubbly.  Quickly stir in about ¼ cup water – mixture will form into a ball (similar to cream puff).  Pour drippings into the ball and whisk.  Mixture will eventually smooth out completely.  Bring to a boil and continue to cook over low/medium heat for about 5 minutes.  Season as necessary
