Lasagna

Lasagna

1)  Combine together:
1 lb ricotta cheese
½ c parmesan cheese
2 cups shredded mozzarella cheese
2 eggs
2)  Brown 1 lb ground beef plus ½ lb Italian sausage
3)  Combine:
30 oz spaghetti sauce 
1 cup water
garlic
onion powder
oregano
salt & pepper

In 9x13 pan, put 1 cup sauce
Cover with a layer of uncooked noodles
top with 1/3 cheese mixture, 1/3 meat, and 1 cup sauce
Cover with a layer of uncooked noodles
top with 1/3 cheese mixture, 1/3 meat, and 1 cup sauce
Cover with a layer of uncooked noodles
top with 1/3 cheese mixture, 1/3 meat, and 1 cup sauce
Cover with a layer of uncooked noodles
All remaining sauce
Cover tightly with foil

Bake at 375 for 1 hour
Uncover, top with 1 cup mozzarella cheese
Bake 15 minutes and remove from oven

Let stand 15 minutes, serve


Italian Sausage

Tsp dried red pepper flakes (can use more if desired)

tsp crushed anise seeds (or crushed dried fennel seeds)

Tsp minced dried onions

1.        Add thismix to 2 pounds ground pork and brown meat in a skillet for about 10-12 minutes or until the pork is well browned.   Use in recipes that require Italian sausages removed from casings.

Pizza/Spaghetti Sauce

2 can (12 oz) tomato paste
3 can (15 oz) tomato sauce
2 cloves (or equivalent) minced garlic
1 small onion, diced
1 tsp salt
4 T parsley flakes
2 T oregano
1 T basil
½ t red pepper
1 T sugar
1 t fennel
1 t anise
2 T olive oil
1 T thyme
15 oz  water 

Sauté onion and garlic in butter or olive oil.  Mix all ingredients in LARGE sauce pan (it WILL make a mess otherwise), and simmer for hours and hours, stirring every 20-30 minutes.  Add more water as needed for thickness desired.
