Sweet Potato Soufflé

Sweet Potato Soufflé

3# sweet potatoes, cooked and mashed (or 3 cups)
3/4 c. brown sugar (save out 2 T.)
3 T. soft butter
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1 cup milk

Mix everything together, put in casserole dish
and sprinkle with the remaining 2 T. brown sugar
and pecans (if desired). Bake 30 minutes at 350 degrees

or until slightly browned on top and heated through.
