Enchilada Chicken

Enchilada Chicken

(we also call this "enchilada guts" because it's like the insides of chicken enchiladas)

In a large frying pan, cook:
2-3 cups cubed meat (chicken)
1 can tomatoes with green chilis (medium)


add 2 cups medium salsa
2-4 oz cream cheese
2-4 oz velveeta

(note:  if this gets too spicy you can add some sour cream.  that will kill the heat)

heat until all cheeses are melted and mixed together.

eat with tortillas, rice, or over potatoes.
